I Can Check That Off the List...
I never use the ringed pineapple when I make one of these because then there's not really enough room for the extra cherries. I like cherries and I really love cherries when they are all buttered up and brown sugar coated then mixed with yellow cake and pineapple. There were 20 butter/sugar covered cherries on this cake when I made it. Dear God. Help me. I'm never going to get into a swimsuit this spring.
The pineapple upside down cake really is the best cake in the world. Well, next to German Chocolate Cake, yellow cake, chocolate cake, chocolate chip cake, red velvet cake... OK. I'll admit it. I've grown to love cake.
that gives me a really warm and fuzzy feeling inside. And no, it's not indigestion from eating the entire thing at once. Maybe it's just a fruit thing because I can literally kill a fruit cake in about 10 minutes too and I'm not talking about a crazy person either. I'm talking about the Christmas Cake that nobody admits they like. But I know there are other closet fruit cake lovers out there. There has to be or they wouldn't be on the store shelves every year.
It should be a crime not to enjoy a warm from the oven piece of pineapple upside down cake at least once in your lifetime. Not the crap made by Sara Lee's fake ass baking company either. The kind that you have to physically mix the cake part, drink the pineapple juice straight out of the can (hey! The pineapple HAS to be strained!) and open a brand new jar of maraschino cherries cause you're gonna need them all, kinda cake is what I'm talking about here.

So... in the words of Marie Antoinette... "Let them all eat cake!"
(You know she never really said that, right?)
